Pear and Macadamia Pie
Recently I have been buying a lot of pears, though every time I do they seem like they are a week away from being ripe. Instead of waiting patiently until they are ready to eat as fruit alone, I have been chopping them all up to bake with them. I recently made pear and walnut brownies, which were incredible (and vegan!), but I had issues getting them out of the pan neatly, so they have yet to make a public appearance. And yes, I ate them with a spoon.
Pear and Macadamia Nut Pie
2 c flour
3/4 c sugar
1/2 tsp salt
1/2 c butter (I used Earth Balance), softened
2 tbsp (more if necessary) water, milk, or almond/soy milk
2 1/2 c pears, in slices
1 tbsp lemon juice
1/2 c macadamia nuts
To make the crust:
-Combine the flour, 1/2 c of sugar, salt, and mix together
-Add the butter and stir or crumble with your fingertips to combine well
-Add the 2 tbsp of you choice of liquid until dough comes together, then wrap and refrigerate for about 30 minutes
Preheat oven to 350ยบ F
-Combine the remaining 1/4 c of sugar, pears, and lemon juice together
-After the dough has chilled, roll it out, reserving any leftovers for a lattice, form into a pie pan, poke the crust with a fork, and bake for 10 minutes
-Add the pear filling to the crust, sprinkle the nuts on top, and form any crust lattice or topping you choose (I made a lazy lattice)
-Continue to bake for approximately 30 minutes, and if the crust begins to brown too early, cover the edges with foil

This would be the perfect Valentine's dessert! We're in the process of moving to Queensland Australia - where macadamia nuts are grown - so this would also be a sweet way to celebrate our new life beginning there. I'm totally inspired, and your pictures are divine! Thanks!
