Pumpkin Cake With Apple Cider Icing
Hey there! Lately I have been out of the world of the internet so I'm slowly getting back into the swing of things. During this period of time I did manage to make this absolutely addicting dense pumpkin cake! It started with some pumpkin ice cream I had made, frozen and forgot about. It tasted kind of bland so I recently decided to re-purpose the failed ice cream into cake. The recipe is very loose, simple, and quick, but if you're feeling up to a kitchen experiment, I encourage you to try it out!
Pumpkin Cake With Apple Cider Icing
1 can pureed pumpkin1/2 c sugar
1/2 c heavy cream
3/4 c brown sugar (approximately)
2 c flour (approximately)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat the oven to 375ยบ F
-Mix the first 4 ingredients in a large bowl
-Combine the last 4 ingredients in a separate bowl
-Add the dry ingredients to the wet and mix well
-Bake for 30-40 minutes
* The apple cider icing was some combination of apple cider, apple juice concentrate, vanilla extract, a bit of Earth Balance, powdered sugar, cinnamon, and nutmeg. I just added more of each to reach a desired taste and consistency! Have fun!
