Sweet Whole Wheat

Want to know what's in this bread...?
Raisins! Walnuts! Apples! Cinnamon!
This bread is like eating a combo between a cinnamon bun and a turnover if cinnamon buns and turnovers had a lot less sugar and were made with whole wheat. Of course this bread is definitely lacking in buttery crusts and pools of icing... but that might just be a good thing. There is a perfect amount of sweetness from the apples and raisins,  and a great nutty flavor from the walnuts, whole wheat, and cinnamon, and it can make a very classy PB&J.

Whole Wheat Bread with Filling
1 c warm water
2.5 tsp yeast
1/2 c 100% pure maple syrup or honey
1 1/2 c all purpose flour

-Let the yeast dissolve in the water for 5 minutes, making sure it foams (if not, the water may have been too warm)
-Add the maple syrup/honey and stir gently
-Let rise 45 minutes

2 tsp salt
2 tbsp oil
1 1/2 c whole wheat flour

-Add the salt and oil to sponge and fold in gently, making sure to combine thoroughly
-Add the flour and mix to absorb all the moisture (sprinkle more if necessary)
-Once the dough comes together, knead for about 10 minutes, adding flour if necessary
-Cover and let dough rise 1 hour*, then punch down
-Let dough rise 40 minutes, then punch down again
-Flatten the dough with your hands to about 1/2 in - 1 in thick into a square shape 
-Spread the apple mixture evenly over dough and slightly press into dough, then roll up in a spiral shape, tuck exposed sides under if necessary, and place in a greased bread pan
-Bake at 350ยบ F for about 1 hour (I wanted to bake mine in the morning, so at this point you can also cover and refrigerate the dough overnight, which also enhances the flavors)

*While waiting for dough to rise, combine:
2 apples (cubed, 1/2 in or less)
1/3 c raisins
1/4 c chopped walnuts
2 tsp cinnamon
-Mix well
