Peanut Butter Bars
To those whom it may concern: these peanut butter bars (with preserves) are vegan and gluten free. To those whom it may not concern: these peanut butter bars (with preserves) are delicious and require few ingredients.
I hope to come up with more recipes like this one in the future. Since the spring has been setting in I've been working with simpler recipes so I can spend less time in the kitchen. That said, I'm hoping to find a happy medium between quality food and quick preparation for every meal, including dessert!
Peanut Butter Bars (with blackberry/pomegranate preserves, walnuts, and oats!)
3/4 c peanut butter (creamy or crunchy)
3/4 c sugar
1 tsp apple cider vinegar
1tsp water
4 tbsp preserves
1/4 c chopped walnuts
1/4 c rolled oats
Preheat the oven to 350ยบ F
-In a bowl, combine 1/2 c sugar, 1/2 c peanut butter, vinegar, and water
-Spread the mixture evenly into an 8x8 baking sheet (grease it first or line with parchment paper)
-Spread the preserves evenly over the peanut butter mixture
-In a bowl, combine the remaining 1/4 c sugar and peanut butter with the walnuts and rolled oats to form a crumbly mixture
-Sprinkle the crumble evenly over the two layers in the pan and bake for 15 - 20 minutes
-Allow to cool, cut, and enjoy!

I just made these and am eating them right now! LOVE them! Great simple recipe! I can't believe it took me less than a half hour to make! I spread half pumpkin butter on one side and half blueberry strawberry jam on the other... I can never make up my mind what kind of jam I want to go with peanut butter so I've tried both. Thank you so much for the awesome recipe! I'll definitely make these again. Can't believe there is no flour, either!

Yum! Can't wait to try this recipe! I think I will use almond or hazelnut butter in place of the peanut and perhaps honey instead of the sugar. I'll let you know hoe they turn out :)

Delightful Bitefuls
I made these this morning and they turned out great. I used natural peanut butter and cut out 1/4 cup of the sugar too. They were a bit soft after they cooled so I tossed them in the fridge and now they're awesome. Thanks for the recipe :)
