Coconut Rice and Spicy Lime Sweet Potatoes

I'm back in the kitchen, and I have a great recipe to share with you! It's a pretty simple one too, so you may only need to buy a few of the ingredients.
Coconut Rice and Spicy Lime Sweet Potatoes
1/2 c Basmati Rice (or long grain rice)
1 can coconut milk
1/2 tsp salt
1 large sweet potato
3-4 tsp oil
1/4 tsp cajun seasoning
1 lime - juice and zest
Approx. 1/2 - 1 tsp agave nectar
salt & pepper
water

To cook the rice:
-Add the coconut milk and salt to a small/medium pot, add some water to make it thinner, and bring to a boil
-Stir in the rice and let cook until it has absorbed the liquid, stirring occasionally and adding more water if necessary

To cook the potatoes:
Preheat the oven to 400ยบ F
-Cut the sweet potato into 1/2 inch cubes, place in a baking dish and toss with approx. 2 tsp oil
-Bake for 25 minutes or until cooked throughout, making sure to check on them and give them a toss once or twice while baking
-In a small bowl, combine the oil, seasoning, lime juice and zest, and agave nectar -tweak to fit your taste
-Once the potatoes are done, mix them with the seasoning in a bowl to evenly coat all the potatoes and add salt and pepper if needed

Serve the coconut rice and potatoes together, and enjoy!!

Love your site! I'm just starting up my own blog and recently tried your Woven Bread recipe. Wanted to let you know that I adapted it a bit (see: beyond-ramen.blogspot.com) but provided the link to your page! :D Thanks!
