Coconut Rice and Spicy Lime Sweet Potatoes
1/2 c Basmati Rice (or long grain rice)
1 can coconut milk
1/2 tsp salt
1 large sweet potato
3-4 tsp oil
1/4 tsp cajun seasoning
1 lime - juice and zest
Approx. 1/2 - 1 tsp agave nectar
salt & pepper
water
To cook the rice:
-Add the coconut milk and salt to a small/medium pot, add some water to make it thinner, and bring to a boil
-Stir in the rice and let cook until it has absorbed the liquid, stirring occasionally and adding more water if necessary
To cook the potatoes:
Preheat the oven to 400ยบ F
-Cut the sweet potato into 1/2 inch cubes, place in a baking dish and toss with approx. 2 tsp oil
-Bake for 25 minutes or until cooked throughout, making sure to check on them and give them a toss once or twice while baking
-In a small bowl, combine the oil, seasoning, lime juice and zest, and agave nectar -tweak to fit your taste
-Once the potatoes are done, mix them with the seasoning in a bowl to evenly coat all the potatoes and add salt and pepper if needed
Serve the coconut rice and potatoes together, and enjoy!!
