Stuffed Baby Portobella Caps

This recipe is great because you don't really have to stick to it. As long as you have a large quantity of parmesan, stuffed mushrooms can really be filled with anything you have lying around, but I kept these guys pretty simple. This is also why essentially every stuffed or filled food (ravioli, dumplings, calzones, gyoza... mmm!) is probably going to make my favorites list: the stuffing possibilities are endless and it's like opening a present in your mouth!

Pumpkin Cake With Apple Cider Icing

 Hey there! Lately I have been out of the world of the internet so I'm slowly getting back into the swing of things. During this period of time I did manage to make this absolutely addicting dense pumpkin cake! It started with some pumpkin ice cream I had made, frozen and forgot about. It tasted kind of bland so I recently decided to re-purpose the failed ice cream into cake. The recipe is very loose, simple, and quick, but if you're feeling up to a kitchen experiment, I encourage you to try it out!

Homemade Pasta- Pappardelle

 I decided to try again at making pasta. In the past it has always been difficult without a pasta roller, but it all really depends more on the ingredients and how you work the dough... so in case you were wondering, this batch was incredibly successful!

Rice Pudding with Tangerine

I almost can't tell if this photo looks appetizing because I have a biased opinion. In case you are wondering, this gloppy pile is rice pudding and it is in fact amazing.
