It's been awhile, but I think this recipe is worth it. These cookies were scarfed down in what seemed like the time it took me to scoop and load the next batch into the oven. These dark chocolate chip cookies are not only vegan, but I found a way to make them thick and chewy without the eggs or butter. I gave them to both vegan and non-vegan friends, and everyone loved them, so keep reading for the secret ingredient!

As a kid I never knew why my mom loved scones so much. There was no point to eating a scone... I couldn't taste the sugar, they weren't gooey or fluffy, and they didn't have frosting. Now I have grown to love scones for their simplicity!

I had attempted to create something similar to it in the past, but I could never get the consistency right. This time I kept it simple by using only two ingredients to create something that is generally different from Boogaloo's plantain cake, but it's a keeper for sure.

Sweet Potato & Brussel Sprout Salad

I've been lagging a bit in the food and photo department lately. I hate using "I've been busy" as an excuse, but I've been kind of busy.  I can attribute part of my slow blogging to the warm weather and my need to spend as little time indoors as possible, which includes time spent in the kitchen. So maybe I've been eating one, two, three too many granola bars and mugs of ice cream lately... but warm weather calls for ice cream! And yes, I will make ice cream in the future. In the meantime I would love to share some of the healthier foods I have taken the time to make (and eat) beginning with this sweet potato and brussel sprout salad.
