Homemade Ricotta

One of my favorite things about spending time in Vermont is the easy access to a million local cheeses. I came across ricotta cheese from Maplebrook Farm, and luckily it is available at Whole Foods stores, so I can find it during the rest of the year as well. After tasting Maplebrook's ricotta I felt like I had been scammed into thinking that dry crumbly stuff from most grocery stores was real ricotta cheese. With that, I whipped up a homemade batch of ricotta.

How to make 1 cupcake

Picking out a single dessert to indulge in (alone or with a friend!) at a bakery almost has a romantic allure to it. Baking a batch of cupcakes or brownies at home often seems like a fun idea, but sitting alone in the kitchen with a half eaten pan of brownies and a stomach ache is not exactly my idea of a good time. Besides, desserts always taste better when you savor them, knowing that you only get one!

Chocolate Cupcakes with Berry Frosting

I have never been one to get excited about chocolate desserts. I love chocolate, but if it's not a brick of milk chocolate, dark chocolate, truffles, or a dessert filled with mostly ganache, it's likely that I'm just not interested. Chocolate cake never excites me, nor does chocolate ice cream. Brownies... not so much. Chocolate cookies... eh.

Lately I've been trying to make chocolate desserts a little more often just to make sure I'm not missing out on anything. Though I still have the same general tastes, I've learned that there are some worthwhile chocolate cakes out there (ahem... this one) that can persuade me to save space for dessert.

Lemon Cake











First off, I am terrible at decorating cakes. The layering, balancing, icing, and smoothing is all too awkward a task for my hands to fulfill. This cake was as far as I got before it almost fell apart into a melting pile of goop and crumble... very tasty goop and crumble though.


Since this cake was a last minute birthday present, I had to work with what was was available. In this case it was lemons... so for the sake of being horribly cheesy: when life gives you lemons, make lemon cake!
