Margarita Macaroons

I don't know if you've had the same experience, but I've found that coconut tends to be a controversial ingredient... meaning the number of people who don't like coconut is shocking. Is it just me or do I know a lot of coconut haters?
Well for those coconut lovers out there, here is a little twist I spun on the ordinary coconut macaroon. A little zest, a little tequila, sound like a good time to you?

Margarita Macaroons
1/2-3/4 c coconut milk
3 tbsp sugar (if you are using unsweetened coconut)
2 1/2 tbsp flour
1-2 tbsp lime juice (depending on your taste)
1-2 tsp tequila
2 c shredded coconut (unsweetened if you can find it)
zest of 1 lime
pinch of salt

Preheat oven to 350ยบ F

-Combine the first 5 ingredients, using only 1/2 c coconut milk to start with
-Mix in the coconut and if your mixture seems too dry, add more coconut milk (the type of coconut milk you use may affect how much you need)
-Mix in the lime zest and salt
-Line a baking pan with parchment paper (otherwise the macaroons will stick), scoop just over 1 tbsp worth of batter, form into a ball, and place on the baking sheet
-Bake the macaroons until the edges brown, approximately 15-20 minutes
-Instead of scooping the macaroons from the parchment paper, slide the entire piece of parchment paper off of the baking sheet and onto the counter to cool (the macaroons can still easily fall apart while they are hot - they have to cool before they harden more)
-Use a new piece of parchment paper and repeat

Jaime...I don't get those coconut haters at all. Not at all! I could sneak coconut into just about anything I make...sweet or savory! But these little beauties...nothing like a bite of pure coconut...oh and the tequila! Love your photography!!! : )

And I know a lot of coconut haters, too. Who the eff hates coconut? Weirdos.

Unfortunately I happened to be married to a coconut hater! But I love the stuff - from the sugar, to milk to yoghurts etc. Like the margarita twist to a classic!

I for one love coconut and my wife loves it too. We'll be trying this recipe later today. I'm sure it will be yummy if we can get it right.
