Waffles & Pancakes Galore!

These waffles opened my eyes to the world of waffles and pancakes. Since ordering these Belgian waffles with cranberries, goat cheese, and cinnamon at Urban Vintage in Brooklyn, I have had mad waffle cravings. The crispy exterior, fluffy interior, and combination of sweet tangy cranberries with smooth, almost savory goat cheese made me want to eat three more orders. Then, upon returning home to my antique waffle maker, I realized Belgian waffles are in a league of their own. My relatively flat waffle maker cannot compete, so I will be heading to goodwill in the very near future where I can always find a wide variety of waffle makers and various kitchen appliances for under $10.

Unfortunately I left Brooklyn the same day of my waffle discovery. No worries though! In an attempt to satisfy my waffle craving, I was introduced to Sweet Sue's in Phoenica, NY (just outside of Woodstock). What you see here is their Pancake Sunday: a fat, fluffy pancake topped with yogurt, fresh fruit, and a homemade berry syrup. It's both the "not as healthy" pancake choice and the "more conscious" parfait choice all in one... could you possibly think of something better?
Just to clarify, this pancake was about one inch thick. I know the photo doesn't fully do it justice...  just believe me. It was just barely sweet, so the addition of yogurt and fruit wasn't over the top, it was just perfect.

While my waffle attempts have yet to appear photogenic, I can share some of my favorite recipes I have come across so far:

Maple Spice's Vegan Waffles/Pancakes
The First Mess' Banana Coconut Waffles
101 Cookbook's Power Waffles

I hope you enjoy them as much as I have!
