Fig Flatbread

Just a quick post about this little creation my friend threw together:

I think we were hesitant to call this a pizza because it is not at all similar to a savory tomato and mozzarella smothered Italian dish. This tasted more like dessert than dinner, but I didn't see that as a problem.

I was not at all prepared to photograph and post about this recipe, so my phone photography on this one is sub-par (please excuse me). This recipe was all my friend's idea. I arrived at her house to find all these ingredients ready to go, and my role was resident dough tosser and pizza cutter - she did the rest.
-Chop 1/2 - 1 onion into slices and place in a heated pan with some butter or oil to caramelize
-Set a pizza stone in the oven and preheat to 420-430ยบ F
-Roll out your dough 
-Chop a handful of fresh figs (4-7 figs)
-Once the stone is heated remove it from the oven, dust with cornmeal, and place your dough on top making sure to roll up any long ends to form an exterior crust
-Start arranging the onions, then figs, some fresh rosemary, crumbled goat cheese, and a sprinkle of salt
-Place the whole thing back into the oven for 20-25 minutes or until the bottom of the crust is crispy and medium gold/brown (the crust on the edges will look slightly dark, but you want to pay attention to cooking the underside of the crust as it holds the most moisture)

OH MY. I would eat an entire tray of that flatbread by myself, no problem. Looks amazing! :)
