Zucchini Bread

As a huge fan of the blog 101 Cookbooks, I had yet to actually follow one of Heidi Swanson's recipes. I take plenty of inspiration from ingredients and flavor combinations she uses in her creations, but following a recipe down to the teaspoon is not something I always feel like doing... I like to explore! After spontaneously buying five zucchini I buckled down to follow Swanson's recipe for this Zucchini Bread - This is a recipe worth following!
